Dough Fermentation: What Happens to Flour Over Three Days

Most commercial dough is hurried along with warm water and generous pinches of fast-action yeast. It rises within an hour, looks puffed, and bakes into something that tastes mostly of wet flour and trapped air. True fermentation is not merely about inflating gluten bubbles; it is an enzymatic breakdown.
When dough rests at around 3°C to 4°C, yeast activity slows to a crawl, but the enzymes inside the flour remain wide awake. Bringing the dough to the peel
Patience does not end when you pull the tub from the fridge. Baking cold dough straight away shocks the gluten, causing it to tear and weep water onto your stone or steel. Allow your dough balls to come up to room temperature over two to three hours before shaping.
Dust your work surface with coarse semolina rather than standard flour. Semolina rolls beneath the dough like microscopic ball bearings, preventing sticking without scorching into bitter black carbon during the bake. Treat the edges gently, preserve the delicate air pockets you spent three days waiting for, and let high heat do the rest.
